Zucchini Fritters

I was given a HUGE zucchini (thanks Abby) and wanted to do something a little different besides zucchini boats or grilled rounds.  
After shredding the zucchini,  letting it drain with salt, and then ringing it out in a towel, it was mixed with Parmesan cheese, a little panko, 1 egg, salt, and pepper.  I made patties and seared them in extra virgin olive oil.  
Served with an over easy egg and tomatoes, I have a new favorite breakfast!

Simple Salmon

"Dill, lemon, and white wine.  So pretty and simple, healthy and delicious. 


Bake covered for 20 minutes at 350.  

A new favorite recipe

After a whirlwind weekend of eating out for our 6th year wedding anniversary, I have been in the kitchen a lot this week. Pinterest has become a slight addiction and a source of inspiration.  I developed a new favorite recipe using a Pinterest recipe and some local ingredients from the farmers market up the road. 

Begin with mixing a batch of polenta with shredded Parmesan and mascarpone cheese. 
Toss kale and small tomatoes with olive oil (I used basil/garlic infused oil), balsamic vinegar, salt, and pepper. 
Spread polenta mixture in dish and cover polenta with kale and tomato mixture. Bake at 400 for 35+ minutes-until kale is very crispy.

New home. New kitchen.

Andy and I purchased our first home a few weeks ago.  We are so proud of our new space, and I just adore my new kitchen-it is not so small anymore!   This new endeavor has also come when I have a lot of time to take on projects. Ah, the joys of being a teacher.  So I will, I will, I will blog my recipes!

Someone hijacked my kitchen!!!!

Andy and I had a nice treat tonight.  Our friend/chef/dietician Abbey cooked us dinner.  Baked chicken, red potatoes, broccoli, and kimchi were plated.  The homemade kimchi was amazing...like want to pair with everything..breakfast, lunch, dinner, brunch, linner... She can hijack my kitchen anytime.

Lobster Roll Monster

Andy and I went to dinner at a new restaurant called The Beggar and Bull. They had a fantastic lobster roll appetizer, however it just left me craving more.  Andy has never been very interested in a lobster roll, but I think it is because of his experiences with a whole lobster and "how they look at him."  I procured lobster claws and tails, steamed them, and then mixed with a small amount of mayonnaise, lemon, and pepper.  Put in a buttered, top sliced roll with crispy lettuce and we now have a new lobster roll fan!  I have created a monster.  One that I like very much.
